Snowman Cupcakes!

Today I’m going to share some super cute Snowman Cupcakes ready for the festive season! They are easy to make and no doubt your friends and family will love them. This recipe makes 12 cupcakes.

Recipe:
Cupcakes -
6 oz self raising flour
6 oz butter
6 oz sugar
3 eggs
A splash of vanilla essence

Icing –
5 oz butter
10 oz icing sugar
1 – 2 tbsp milk

Decoration –
Snowflake sprinkles
White marshmallows
Black and Red/Orange Writing Icing

Method:
Start by making the basic cake recipe, if you have a mixer you can chuck all the ingredients together.
But for all of you in similar situations to me without one, cream the sugar and butter together. Followed by beating in the eggs then folding in the flour.


Divide between 12 cupcake cases and bake in the oven at 170C for 15 – 20 minutes. Then allow to cool.



First cream the butter till it is smooth, and then slowly adds in the icing sugar making sure that it is all blended together. Then add in the milk. Whisk it all together until it is thoroughly blended together then pour into a piping bag to pipe onto the cakes.
For the decoration take one white marshmallow and place it on top of the buttercream icing in the centre. Take your black writing icing and draw on the eyes and mouth and using your red or orange icing, draw on the nose. Then draw on some buttons onto the buttercream icing and some arms.
Ta-dah! Your snowman cupcakes!

Winter Favourites

Jack Wills Blanket
This is one of my favourite things but living in a student house, we tend not to always have the heating on till it gets really cold, so this blanket comes in handy as an extra layer of warmth in bed! Or wrapped up on the sofa.

Hot Drinks
‘Tis the season for hot drinks. Hot chocolates, tea, green tea, coffee, lattes, you name it, all those coffee shops bring out the Christmas versions of all the drinks they sell which you can’t possibly get through them all by the time they go! I also noticed the Christmas coffee cups they have already, I mean if that doesn’t make you go buy a drink I don’t know what will!



Wrapped Up Walks In The Morning
I recently went for a little walk around Richmond Park, which is just round the corner from my house. It was more to take in the scenery and get some fresh air but it was nice to wrap up and go for a walk outside.


VS Jumper
This is another one of my favourite items, my victoria secret jumper is so large that I can’t help but live in it when I’m in the house, it keeps me super warm and is so comforting on cold days!

Baths
I’ve only just started having baths, I always thought they were a waste of time when you can have a quick shower but now I love them, and I’ll be having baths all the time over winter! The perfect way to relax and warm up.


Christmas
I’m not going to go into a huge amount of detail about Christmas, except I LOVE it, like really love it.

Family time
I don’t know how it happens but it does, over winter there just seems to be a bit more family time, we all enjoy watching Saturday night TV together and there are all the shopping trips that need to be done for Christmas!

Cuddles with the dogs

I mean these are great all year round, but since one of our dogs is now scared of the dark, he’s now become so needy and wants cuddles all the time. I’m not complaining, I love hugs from him!



What I Love About The Current Season

The Weather
I’m probably the only person in England that sort of enjoys the weather at this time of year. Obviously not the torrential rain, that’s just too much but the cold mornings, getting dark early and even the light showers of rain. I’m a strange one, I know!

Comforting, Warming Food
You may, or may not, have noticed that the last couple of recipes that I’ve written are “comforting and warming”. This fits perfectly in with what I love about the season, they aren’t quite my dad’s stews or my mum’s crumbles, but they’re the best that I can do and they are just what I love to eat this season.

Spending Time With Loved Ones
Cringe! But these nights in with these people are just what I love to do and I wouldn’t have it any other way!

Sundays
I’m not working too many of the following Sundays and it feels like they finally have meaning again! Having a lazy Sunday, wander around town or around Richmond Park are just a few ways to have the perfect Sunday. Topped off with a roast dinner of course!

TV

Oh my, the TV at this time of year is when it’s at its finest! X Factor, all the reality tv shows are back, I can’t get enough of them!


Apple and Blackberry Crumble

I've had these ingredients just sat around for a while and I love to have blackberries in a crumble! This is such a great dessert for this time of year!

Ingredients:
Filling -
4 apples
1 tbsp water
3 tbsp sugar
225g blackberries
Crumble Top –
170g plain flour
75g butter
75g sugar

Method:
Preheat the oven to 180C. Put the apple chunks, water and sugar into a saucepan over a low heat and cook until the apples are soft, for roughly 10 minutes. Stir every so often so that it doesn’t stick. Taste and add sugar to see if it needs more.





Transfer the apples to a dish and add in the blackberries.


How cute are these ramekins my mum gave me?

I used my mums homegrown blackberries! And she just happened to have a few raspberries so I thought I would add them in too!

To make the crumble top, rub the butter into the flour to resemble breadcrumbs and add the sugar.





Sprinkle the crumble mixture over the filling mixture and cook in the oven for 30 – 45 minutes for larger crumbles and around 15 minutes for smaller, individual crumbles.

Serve with ice cream or cream!


It was delicious if I may say so myself!
