When I visited the Good Food Show last November I picked up one of these spice kits from Bit Spicy to make an Indonesian Korma. My Mum and I tested basically every sample they had and bought a selection for my Dad but I wanted one for myself and I love a good korma.
It's relatively easy to make but it does take some time. I'm not going to go through the whole method with you but you would need approximately 2 hours to make it and you cook the chicken separately then add it to the sauce.
The flavour of this korma is like no korma I've had before! It's not mild at all and has a very good kick of spice to it and it has a more yellow colour than your normal curry. I had mine with chicken but it also suggests prawns which I would love to try!
As I was browsing their website I noticed they do spices for other foods as well, not just curry so I'm keen to try their Mexican range, we all love some good fajitas now don't we!
I'm going to the Good Food Eat Well Show in a few weeks so hopefully they will be there again so I can pick up a few more spice packs!

Bit Spicy South East Asian Indonesian Korma

I recently went to the Good Food Show in London and it was
so great! My mum and I enjoyed the wine samples a lot!
Anyway, I was looking for some new things to try and found
this Brownie Mix. It looked great from the start, I absolutely love the
packaging, and it looks so great and is very original!
To make it even better, it is made with wholemeal flour and
you use oil as the fat in it. The process to make it is so quick and easy; you
put everything into a bowl (the mix, oil, water and eggs) and mix it all
together so that it is well combined. Grease and line the tray you want to use
with greaseproof paper and pour the mixture into it.
Bake the brownies for 20 minutes and remove from the oven to
enjoy.
They were so well received by my work colleagues, they’re
asking for more already!
There’s also a little fact on the back of the packaging:
“Did you know…that wholemeal flour is an important source of protein and fibre
and is also an amazing source of vitamins and minerals?”
These are aimed at children, as it is an easy way for them
to learn how to bake.
I would so recommend them, even if you’re a big kid like I
am, they’re still really good and they taste so great!

Today I’m going to share some super cute Snowman Cupcakes ready for the festive season! They are easy to make and no doubt your friends and family will love them. This recipe makes 12 cupcakes.
Recipe:
Cupcakes -
6 oz self raising flour
6 oz butter
6 oz sugar
3 eggs
A splash of vanilla essence
Icing –
5 oz butter
10 oz icing sugar
1 – 2 tbsp milk
Decoration –
Snowflake sprinkles
White marshmallows
Black and Red/Orange Writing Icing
Method:
Start by making the basic cake recipe, if you have a mixer
you can chuck all the ingredients together.
But for all of you in similar situations to me without one,
cream the sugar and butter together. Followed by beating in the eggs then
folding in the flour.
Divide between 12 cupcake cases and bake in the oven at 170C
for 15 – 20 minutes. Then allow to cool.
First cream the butter till it is smooth, and then slowly
adds in the icing sugar making sure that it is all blended together. Then add
in the milk. Whisk it all together until it is thoroughly blended together then
pour into a piping bag to pipe onto the cakes.
For the decoration take one white marshmallow and place it
on top of the buttercream icing in the centre. Take your black writing icing
and draw on the eyes and mouth and using your red or orange icing, draw on the
nose. Then draw on some buttons onto the buttercream icing and some arms.
Ta-dah! Your snowman cupcakes!

This is the ultimate comfort food. It is often said to serve it with mashed potato but I think a bowl of this on its own is plenty enough. It is definitely my go to recipe in the winter.
Ingredients:
Stew -
400g Diced beef
2 Celery sticks
2 Carrots
1 Onion
2 garlic cloves
1 leek
3 potatoes
1 tbsp Oil
Herbs
1 tbsp Butter
2 tbsp plain flour
2 tbsp tomato puree
2 beef stock cubes
Dumplings –
125g plain flour
1 tsp baking powder
60g suet
Water, to bring together the dough
Method:
Put the kettle on, put the celery,
carrots, onion and herbs in the pot with the oil and butter. Soften for 10
minutes, then stir in the flour until it doesn’t look dusty anymore. Then stir
in the tomato puree and stock cubes.
Gradually stir in 600ml of hot water, then add the beef and
bring to a gentle simmer. Let it simmer for 2 hours.
Make the dumplings by sift the flour and baking powder into
a bowl. Add the suet and water to make a thick dough. Roll spoonfuls of dough
into balls and coat in flour.

I've had these ingredients just sat around for a while and I love to have blackberries in a crumble! This is such a great dessert for this time of year!
Ingredients:
Filling -
4 apples
1 tbsp water
3 tbsp sugar
225g blackberries
Crumble Top –
170g plain flour
75g butter
75g sugar
Method:
Preheat the oven to 180C. Put the apple chunks, water and
sugar into a saucepan over a low heat and cook until the apples are soft, for
roughly 10 minutes. Stir every so often so that it doesn’t stick. Taste and add
sugar to see if it needs more.
Transfer the apples to a dish and add in the blackberries.
How cute are these ramekins my mum gave me?
I used my mums homegrown blackberries! And she just happened to have a few raspberries so I thought I would add them in too!
Sprinkle the crumble mixture over the filling mixture and
cook in the oven for 30 – 45 minutes for larger crumbles and around 15 minutes
for smaller, individual crumbles.
